There are a number of different polyols currently available in the food space, including erythritol, hydrogenated starch hydrolysates (sometimes listed as maltitol syrup, hydrogenated glucose syrup, polyglycitol syrup, polyglucitol or simply “HSH”), isomalt, lactitol, maltitol, mannitol, sorbitol and xylitol. These polyols all offer many benefits when added to products, including calorie reduction and bulk; however, some polyols offer different benefits than others in formulation and the final product.
